Vegan Cookies

Ingredients: 

  • 90g vegan butter 
  • 50g dark chocolate, roughly chopped
  • 80g jumbo oats 
  • 100g ground almonds 
  • 30g plain flour (gluten-free if you like) 
  • 25g golden flaxseeds 
  • 50g coconut sugar 
  • 30g maple syrup 
  • ½ tsp vanilla pod powder 
  • Pinch Maldon salt 

Step 1

Preheat your oven to 170 degrees.

Step 2

Mix all the ingredients together in a bowl to form a fairly firm dough. Place it in the fridge for 30 minutes to chill completely. Once chilled form 6-8 balls (they should be about 2.5 cm wide) and place them spaced out on a linked baking tray.

Step 3

Cook in the oven for 15-20 minutes, watching them carefully, once they have doubled in size remove them from the oven and leave to cool completely. It’s really important you leave them to cool as this cooling process is what gives them their chewy texture.

Step 4

Enjoy with a big mug of tea!
