Simple Garlic Chicken Quesadilla Recipe


  • 50g watercress
  • ½ small bunch of chives
  • ½ lemon zest
  • 5 tbsp soft cheese - garlic flavoured
  • 2 roasted chicken breasts
  • 2 large tortilla wraps
  • 30g mature cheddar 
  • 30g mozzarella
Blend the watercress, chives, lemon zest and soft cheese together and season with salt and pepper. Fry the reserved chicken skin for 5 mins until crisp, then set aside. Meanwhile, shred the roasted chicken breasts. 
Spread the cheese mix over a tortilla wrap, lay on the chicken, crispy chicken skin, the cheeses, grated, and then lay on the second tortilla wrap on top. Heat a frying pan over a medium heat, add the quesadilla and cook for 2-3 mins on each side. Then slice into four and enjoy!
