VEGANUARY | The perfect Pesto, Sausage & Gnocchi Traybake 

                                   


This recipe is SO EASY, high in protein and ready in just 30 mins! Baked gnocchi has become a favourite of ours and by adding vegan sausages here too as an easy protein sauce its a 10/10 from us!! 

 

INGREDIENTS

- 500g gnocchi 

- 1 head broccoli 

- 100g chestnut mushrooms

- 200g baby plum tomatoes

- 1 red onion 

- 4 vegan sausages (sliced)

- 1tbsp olive oil

- 1tsp oregano

- Salt & Pepper

- Chilli flakes and a drizzle of good quality olive oil to serve. 

- Burrata (optional for non vegan)

 

METHOD

Add the veggies, gnocchi and sausages to an oven proof dish and coat well in olive oil. Season with oregano, salt and pepper. Bake at 180C for 25 minutes. Stir in the pesto. Serve with a drizzle of olive oil and, if you like, some vegan cheese too.
