These Orange Coffee Energy Bars from Madeleine Olivia are the perfect snack to give you a boost during the working week. The preparation is super easy and totally vegan!
- 200g of rolled oats
- Zest of 1 orange
- 2 tsps of fresh orange juice
- 400g medjool dates
- 50g hazelnuts
- 2 tbsp ground coffee beans
- 1 tbsp cocoa powder
- 45g dark chocolate, broken into pieces
- Pinch of sea salt
- 45g dark chocolate, melted
Line a baking tin (approx 20 cms square) with parchment paper, overlapping the top, so easy to remove the bars.
Place all the ingredients into a food processor, and blitz until forms a sticky paste. If too crumbly add a splash or water (or fresh orange juice) and blitz again.
Turn out the mixture into the baking tin, and firmly press down, making sure you every spread out the mixture and get into all the corners. Press down all over, then place in fridge for a couple of hours to firm.
Remove from fridge and drizzle over melted chocolate. Leave to set in fridge. Turn out and cut into bars.
